Oktoberfest chicken recipe or Wiesn Hendl recipe is a very famous Oktoberfest recipe. Large amount of hendl is consumed during the Oktoberfest festival which is held in Munich, Germany every year. The Germany Oktoberfest is a spectacular 16-day celebration which is held from late September to early October and the Oktoberfest plays a very important role in the Bavarian culture. Hendl is an Austro-Bavarian word for chicken and wiesn hendl recipe or Oktoberfest roast chicken recipe is one of the many famous Oktoberfest recipes. Wiesn hendl showcases delicious whole chicken being slowly roasted on gas grills and basted with butter which is usually eaten with brezeln (pretzel) and beer. This Bavarian-style roasted chicken is a famous Oktoberfest food.

- 1 whole 1.5 kg chicken
- 60 g butter
- 1 bunch fresh parsley
- 2 1/2 teaspoons salt
- a pinch of ground black pepper
- preheat oven to 195°C
- add salt and pepper to both the inside and outside part of the chicken
- rub evenly so that salt and pepper is spread evenly
- add butter to chicken
- rub butter evenly
- rinse parsley with running water
- dry with absorbent towel
- chop the fresh parsley
- transfer parsley to a mixing bowl
- add a small quantity of butter to parsley
- mix evenly as per the Oktoberfest chicken recipe
- stuffed parsley mixture into the chicken
- brush some butter on the chicken
- sprinkle some salt on the chicken
- put chicken breast-side up on a roasting tray
- put chicken into oven as per the wiesn hendl recipe
- cooked for one hour or until the chicken becomes golden brown
- remember to baste chicken regularly using the fat from the tray
- serve wiesn hendl with brezeln and beer
